{Homemade Berry-licious Chia Jam}

Berry-licious Jam

This recipe was adapted from Ohsheglows.com. This is a great vegan website (for those who haven’t visited it yet I highly suggest it!) This jam is naturally sweet plus it has all the added benefits of chia seeds. As many of you know these magical seeds have been dubbed a new superfood. They add no flavor to the jam yet they provide consistency to the recipe and cut the cooking time. Additionally they help stabilize blood sugar levels and keep you feeling fuller longer. It is the richest plant source of omega-3, it’s a good source of protein, it’s low in calories, it’s extremely high in antioxidants and the list goes on and on…So there are many reasons you should add this jam to your breakfast or snack. My favorite chia jam combinations: with peanut butter and toast…or with crackers and cheese as a flavorful snack. Also works great on oatmeal, cookies, bread, muffins, bagels, parfaits, granola, quinoa and more! So go ahead and experiment with this glorious home made jam…because it’s not only healthy but it can be ready in 20 min! How great is that?! Chia seeds are truly magical.

Ingredients:

2 cups fresh blueberries
1 cup fresh strawberries
2 tbsp pure maple syrup, or any other other liquid sweetener – add more if desired
1 tbsp honey
2 tbsp plus 1 tsp of chia seeds

Directions:

1. In a medium-sized non-stick pot, bring the berries and 3 tbsp of liquid sweeteners to a low boil. Stir frequently, and reduce heat to low-medium to simmer for about 5 minutes. Lightly mash the berries with a potato masher or fork, leaving some for texture.

2. Stir in the chia seeds until thoroughly combined and cook the mixture down until it thickens to your desired consistency, or about 15 minutes. Stir frequently so it doesn’t stick to the pot.

3. Once the jam is thick, remove from heat.

4. Store jam in an air-tight container in the fridge. For best results consume within a week.

Notes:
If using frozen fruits – let thaw completely before making the jam.

Eating suggestions: try with whole grain toast and some nut butter….yum…and of course top with fresh fruit on top!
