{Negative Calorie Raw Shredded Salad – load up on this to curve hunger}


Have you heard of negative calorie fruits and vegetables? For those who haven’t….you can eat these amazing items without feeling guilty since the amount of calories these veggies have are burned during the digestive process! At least most of them. These vegetables are essentially very low in calories, and furthermore many nutritionist consider these negligible calories. This means…eating them raw won’t contribute much to your caloric intake of the day. So I’ve created an awesome shredded veggie salad with some of these negative calorie items. It’s appearance resembles a cold slaw salad but without the fattening mayo that usually comes with it. I’ve created a light salad dressing using non fat greek yogurt as a base. Although this recipe makes a lot of salad. Don’t be afraid. Eat it as a snack, mix it up with some lettuce, stuff into a pita for a vegetarian lunch, add it to a grill cheese,
or serve it as a side dish in a casual lunch or party. Additionally I posted this useful Food list which states which fruits & veggies made the cut! Print this list, post it on your fridge and stock up on these items!! And remember…just because they are considered to have negative calories doesn’t mean that the salad dressing you use or the nut butter you dip them into has negligible calories too! So pair them wisely!


1 cup carrots
2 cups red cabbage
1 english cucumber, makes almost 1 cup
1 apple
4 radishes
1 generous tbsp non fat greek yogurt
1/2 tsp apple cider vinegar
salt & pepper to taste
2 tsp olive oil
1/2 tsp dill
1/4 tsp garlic powder
3 tsp coconut water
1/4 tsp liquid sweetner , like honey or agave


1. PREPING THE SALAD: Make sure you wash the vegetables thoroughly before making the salad. Let air dry and then proceed. Do not remove the skin from the cucumber or the apple.

2. First chop the red cabbage finely by hand. Add to a salad bowl. Using a cheese grater or any other vegetable chopping device – shred the carrots, cucumber, radishes and pear. Pour on top of the salad.

3. FOR THE DRESSING: add all of the ingredients into a small mixing bowl. Whisk together. Add salt and pepper to taste. Pour the yogurt dressing over the shredded salad and mix together.


TIP for packing this salad on the go: I love to recycle nut butter jars…They look like pretty mason jars and make the perfect salad container. So next time you buy a peanut or almond butter think twice before throwing its container away. For best results wash it with warm water and soap. This helps to break down the sticker glue. Clean, store & reuse. I also love to use those empty jars for storing baked goods and giving them as gifts around Christmas! So store those jars yearlong so you’ll have enough for the Holidays.
