Avocado, Cucumber & Micro Tomato Salad
This recipe was inspired by Halloween colors. You get lovely oranges from the cherry tomatoes and shredded carrots plus different shades of green. The end result….a salad worthy of sharing with people you love! I actually made this salad for my father’s birthday (hence the fancy presentation)..and it was gone by the end of the night. I love the combination of flavors and textures in this salad. You get the creaminess from the avocados, the crunchiness from the cucumber slices and the bursts of sweetness from the cherry tomatoes. It’s delicious. Besides working great as an appetizer or side salad… This makes the perfect vegetarian/vegan lunch. Want more indulgence? Add goat cheese or try any crumbly cheese of preference. It works well with the remaining ingredients.
6 cups spinach, lettuce or mixed greens
1/2 cup shredded carrots
3/4 cup cherry tomatoes
1/4 cup goat cheese, *optional – divided among the guest’s plate
1. Wash everything. Cut the avocado and cucumber into thin slices.
2. Layer the spinach first. Mix in the carrots, cumber and tomatoes. Top the salad with the avocado slices. Garnish with goat cheese if desired.
3. Garnish with goat cheese if desired.
Servings: 4 main salads or 6 side salads
