{Detoxifying vegan wrap: don’t be scared by the title..it’s delicious}

Detoxifying vegan wrap

Summary: 

Super easy and quick, especially if you already have hummus in the fridge or use the store-bought kind. Note: if using the store-bought kind, try adding 1 garlic clove (minced) and about 1/2 tsp of fresh lemon juice. This will give it a freshly-made and savory taste. Additionally it will boost it’s detoxifying powers. This wrap contains several detoxifying ingredients which include the whole grains, chickpeas, raw garlic, cabbage and lemon juice. Plus…did you notice it’s also a vegan recipe? If you taste it, trust me – you won’t miss neither the cheese nor the meats! It’s light, refreshing and delicious – perfect to kick off that desperately needed cleanse. For more information on detox, read my article HERE.

Ingredients:

3 whole wheat tortillas or flatbreads
1 small ripe avocado
1 small tomato
3/4 cup red cabbage
1.5 cups  mesclun / spring salad mix
salt & pepper
lemon rind, *optional, for garnish and zest
chickpea hummus, *You can use storebought hummus or make it from scratch; get my recipe HERE.

Directions:

1. Heat the tortillas, one at a time, either on a pan or with an electric grill. Heat for 5-8min on one side or until you see that the tortilla starts getting crispier. Set aside and repeat.

2. For the avocado: simply remove the skin and cut into slices. Slice the tomato into thin slices. Use 3-4 slices of each per tortilla.

3. ASSEMBLY:
Lay the tortilla or flatbread on a plate. Spread the hummus evenly  throughout the piece. Now toss about 1/2 cup of the mesclun on each tortilla, 1/4 of cabbage, the avocado and tomato pieces. Season the top layer with some salt and pepper. Sprinkle with some lemon rind if desired, as garnish for an added zesty kick. Visual? Arrange according to the pic below!

4. Close up the wrap and eat with both hands…and lots of napkins (if you are a messy eater like me).

Serving Size: 3 wraps; serves 2-3 people.

…. looks good doesn’t it ?  Stay motivated, stay active, stay healthy !! This is a new year with new opportunities to become a better version of yourself. Never doubt yourself. Anyone, with an adequate state of mind and enough desire to change can do it! Just do it!
