Summary: 
This works great as a side salad and pairs lovely with a light vinaigrette. I love to make this when I get tired of eating spinach or any other leafy green…why? Because this salad recipe has none included! This is a colorful, delicious and attractive way of eating a serving of raw veggies. The goat cheese adds a creamy sensation, the cranberries add a touch of sweetness and the cashews add some saltiness. I served this with a steamed tilapia filet and some boiled potatoes. Simple and easy – this salad added all the brightness my dish needed.

Nutrition information: Zucchini is virtually made of water so it’s very VERY very LOW in CALORIES. One medium sized zucchini has 33 calories on average…so this is the perfect snacking/sauté/ or salad vegetable. Additionally it’s a good source of vitamin A (along with the anti-aging carrot included in this recipe. I’ve posted before about the benefits of red cabbage – besides being a great detox food, it’s also extremely low in calories. Additionally it contains polyphenols a compound that provides antioxidant, anti-cancer and anti-inflammatory properties. So serve this salad as an appealing and colorful side dish…OR keep it all to yourself and eat it with a guilt free conscience! If eating it all – feel free to add some chopped grilled chicken pieces, tuna chunks or any other lean protein side.

TIP: When picking/buying zucchini look for a firm consistency and a glossy appearance.

Ingredients:

1 green zucchini
1 yellow zucchini
1 carrot
1/2 cup shredded red cabbage
1 tbsp dried cranberries
2 tbsp chopped lightly salted cashews
1 tbsp crumbled goat cheese, *optional

Directions:
1. First peel and throw away the outermost skin of the zucchini & carrot stick. Peel enough so the zucchini is still light green and not white. This will create pieces of different shades of green!

2. In a medium bowl or plate start by peeling the rest of the zucchini until you reach the seedy core. Then peel the carrot until you can. Reserve the core of these vegetables for other recipes; they work great in sautés or with white beans.

3. Add the dried cranberries, cashews (or other nut of preference) and goat cheese (if using) and you are done!

 

Servings: 2 medium sized portions. If making 4 small side servings, double the amount of red cabbage.

**LUNCH IDEA:**

Hummus & Ribbon salad wrap

Yup it’s another meatless wrap idea….Start with a whole wheat flatbread, pita or tortilla…Then add some chickpea hummus as a protein base, about 3/4 cup of ribbon salad, 2 sliced baby tomatoes, a handful of mesclun salad (use any leafy green available) and you are good to enjoy! This is a great lunch on the go idea because it taste good COLD. No microwave required, it’s light, nutritious, low in fat and yummy!
