Summary: I love Valentine’s Day. For me it’s not about buying an expensive gift or making any grand gesture it’s about showing your loved one that you care for him, you care about him, you know him…and I love making something special out of it…We have a home-made / creative gift policy. It’s a test. Lets see how well we know each other and what new and goofy way we make each other laugh. I love to plan a multi course dinner where we both cook and share the experience, drink a little wine and just enjoy our company. I mean it seems more special if you both had something to do with it ..right? I believe in keeping an independent life from your partner but I also believe that sharing some interests and activities are just as important. I think it creates a stronger bond between the couple. But enough rambling about love and relationships…
Here is a VERY SIMPLE SALAD recipe…that is perfect for today…or any other special day of the year. The salad itself only contains 4 ingredients!! It’s so simple – sweet, crunchy, creamy and fresh…It’s visually stunning and delicious. The flavors work so well together. I had never made a watercress salad before, but they are beginning to show up fresh in the supermarket so..I had to buy it and test it out. I am so pleased with the results. It’s soft and tender in flavor plus the leaf is so beautiful. It’s the perfect leafy green to add to a salad when you are entertaining or want to replace the same boring lettuce. Plus did you know that watercress is a diuretic and great detox food? Which makes it the perfect food just before your period (you know what I mean…when you feel bloated and just uncomfortable with yourself….Now you’ve got a natural remedy for it…and a cheap one too!) Yield: 2 to 3 side servings or starter salads
FOR THE SALAD:
4 cups watercress or arugula
1/2 lb. fresh strawberries, stem removed & sliced
1/4 cup crumbled feta cheese
1/4 cup sliced almonds
3 tbsp Extra virgin olive oil
1/2 tbsp thick/creamy balsamic vinegar
1/4 tsp honey
1/8 tsp of each – salt & pepper
1. Wash the salad ingredients and air dry. Add the watercress into a big bowl, layer the sliced strawberries, crumbled feta and finish off with the almonds.
2. Prep the dressing: in a small ramekin or bowl whisk all the ingredients.
