Healthy Spring Recipes

For those who haven’t read our bio (found on the top of the page & titled “Hello World”)…we live in Puerto Rico: a tropical paradise. Come this time of year the weather starts to change. The breeze starts to disappear and the hot humid summer weather starts to seep in. Hence all my brain wants is cool, fruity, watery recipes. I’ve compiled a small list of recipes that encompass just that. They have popular Spring flavors such as lemon and coconut, but I’ve added some thirst quenching ingredients into others. My favorite thirst quenching ingredients include cucumber and watermelon. If you are a fan of these, you’ve got to try recipe #3 and #6 (yes I added cucumber to my juice recipe). Perhaps you are more of a Meyer Lemon fan? Browse recipes 3 through 6.

Without further delay, click on the recipe name below to be redirected to the recipe post.

1. Banana Coconut Oatmeal Muffins

2. Roasted Carrots with Dill

3. Avocado, Watermelon & Cucumber Salad

4. Goat Cheese Pasta Primavera

5. Meyer Lemon & Blueberry Pancakes

6. Carrot-Apple Detox Juice

Hungry for more?

This is a simple 3-ingredient tropical sorbet. (Did I mention it’s ready in under 10 min?! Plus – NO fancy ice maker needed!!)

7. Vegan Mango Sorbet : This soft-serve sorbet is made with coconut milk & lime zest….yum! Which means its safe for those lactose intolerant tummies…

Vegan Mango Sorbet

So…No excuses. Find your motivation, get cooking, & stay inspired. Have a healthy day!
